Many basic baking recipes call for using cake flour. You can make your own cake flour from scratch using cornstarch. Simply measure 1 cup of flour, remove 2 teaspoons of flour from 1 cup measure, replace with 2 teaspoons of cornstarch. Sift five times. This is the way my grandmother made “soft flour” and this is the way I make it. It works for my baking dishes. Hi Ibringthetruth1 – when the cake comes out of the oven you can’t tell the different. Everything just taste delicious. Making your own cake flour saves money and space because you don’t have to buy two different types of flour. Also you will use the cornstarch in over recipes like gravy, making corn dogs, etc.

Hi Nancy! I also notice more recipes say Table instead of Tea but Tea works for me. Try it both ways and see if it make a difference when you are baking. It’s kind of like making pie crust – so many different videos on the best way to make it but you have to try it to see which one works for you. Teaspoons works for me and most cakes I bake. Hi Beadcellar – Sorry for the delayed response! I make cake flour as needed only enough at that time for the recipe. Sometimes I get a coupon that helps me purchase store brought flour for free so I’ll have some of that on hand to use – if not- I make as shown in the video as need. When I studied psychology this was a Pavlovian approach. People can attach themselves to the ideas but Jones pushes the button and gets the response (or non-response) he wants.
